ALEX WINCHESTER

Founder | Operational Consultant

Alex brings over 25 years of hands-on hospitality experience spanning nearly every role the industry has to offer — from Corporate Bar Trainer across the UK and internationally, to General Manager, Openings Manager, Operations Director, and Managing Director, through to owner-operator in his own right.

That breadth of experience is what makes Alex’s perspective genuinely distinctive. He has worked across the full spectrum of hospitality concepts — from the global scale of Planet Hollywood to some of the industry’s most respected and prestigious operators — giving him an instinctive understanding of what it takes to build and run a business that performs at every level.

What Alex brings to every engagement is a rare combination of strategic thinking and operational precision. He understands both the big picture and the detail — developing leadership pathways that create real culture and capability, while putting in place the standards and structure that allow businesses to operate with consistency and confidence.

Having built, led and grown businesses himself, Alex understands the weight of ambition and what it truly takes to realise it. He brings that lived experience to every client — offering the strategic clarity and operational discipline to help businesses reach their potential without losing their purpose.

SUE GRAHAM 

Training & Development Consultant

Sue’s background covers more than 20 years’ experience ranging from General Manager, Area Manager, New Site Openings Manager (UK & Internationally), Head of Franchise and Brand (UK & Internationally) and Training & Development Manager.

Sharing her knowledge and extensive experience with some of the hospitality sectors most innovative and admired brands earning a reputation for detail, standards and quality in all aspects of service, food, beverage and environment alongside providing training, learning and development to teams in hospitality at every level.

Sue has consulted and assisted hospitality brands and venues with operational, training and development support and resource – from pop-ups to established brands and will bring a wealth of experience to help build your business and team expertise.

MATT FAIRHURST

F&B Operational Consultant

Matt brings more than twenty years’ experience across restaurants, bars and hotels in the UK and internationally, operating at every level where standards, commercial performance and day-to-day delivery all matter.

His background combines high-end food and drink development with genuine commercial accountability – spanning Michelin-recognised environments, award-winning cocktail venues and complex multi-site operations, with direct responsibility for P&L, team performance and operational delivery.

What sets Matt apart is his ability to hold creativity and control in the same hand. He builds food and drink offers that genuinely excite guests, while ensuring they work commercially. He is particularly skilled at identifying where money is being lost across purchasing, labour and menu structure – and at putting practical, effective fixes in place quickly.

Alongside this, Matt has built and developed teams in demanding environments, establishing clear standards, strong communication and a culture of accountability that allows businesses to run with confidence rather than in reaction.
